Happy St. Patrick's Day!

 

Hello! And Happy Friday! Are you wearing green today? Would you believe me if I told you I don't own a single piece of green clothing? I do have a shamrock necklace I plan on wearing, so I'm covered. This morning I have a hair appointment, and after that, I am coming home to put an Irish Beef Stew into the crockpot for dinner tonight. I made it last year, and it was delicious, so the kids requested it again this year. Madison is bringing Irish Soda Bread, and Peyton is bringing dessert. I'll share some photos on Monday!

The snowy days this week made me hungry for comfort food, so dinner on Wednesday was a delicious roast chicken with mashed potatoes, stuffing, gravy, peas, and corn. Now, before you think I am Wonder Woman and I Dream of Jeannie combined, let me tell you how I created this delicious faux fancy meal. The chicken is a Perdue Harvestland Oven Ready Roaster. It is fully prepared, so you literally unwrap it and put it in the oven! The potatoes are Idahoan instant, and they are really good! The stuffing is Stove Top and the vegetables, Birdseye. I did make the gravy myself with the drippings and liquid from the chicken. It was not Thanksgiving dinner, but it was very good and perfect for a cold and snowy Wednesday in March. 

Well, time for me to get going. I need to fix my hair before I go to my appointment. Tell me I'm not the only one that does that! Thanks so much for visiting, my friends. I hope you have a wonderful weekend and a festive St. Patrick's Day!

  4. Yes! Fix hair before going to the salon and clean house before hiring anyone to clean for me :) I've never had a housekeeper and that's why :) I would just clean before she got there, so what's the use? Have a great day!

  5. Your meal looks so delicious and comforting! I use the same instant potatoes! I never make mashed potatoes from scratch. Yes, I fix my hair before going to get it cut. Looking forward to the pics of your gathering!

    You are lucky for still being able to eat all that... For me it is mostly too high in potassium for my kidneys in stage IV of CKD.
    But you write it so well—a practical lady.
    WISH I could get dressed but with that stupid knee immobilizer I can hardly get on anything... aside from that velcro eating things!
    Patience will be needed to further heal.

  11. We had a blizzard yesterday and today I wore a sundress because it's literally the only clothing I have that has green on it!
    Your chicken dinner looks so good. I use Idahoan mashed potatoes too. They are so good, not like regular instant potatoes.

  12. What a perfect dinner for a snowy, cold day - and making it the easy way is just what we need some days! I cooked Irish foods and listened to Irish music (no dancing the jig though!) and then we had a movie marathon...the end of Spring break with the kids - I can feel the tears coming. So appreciated your older post where you said you would go back and tell your younger self it'll be okay as they grow - I need to hear that. Squeezing all I can into today and then dropping him back at school Sunday afternoon. Keep snuggled in and enjoy your weekend...I think it's time for a cup of tea here. Hugs, Mary

  13. A delicious and cozy dinner! I don't think anything is as good as chicken or turkey and stuffing! I've roasted boneless chicken breasts (coat them in olive oil, some sage and rosemary, salt and pepper) with boxed stuffing...just prepare like you would for stovetop, but add it all around the chicken on the roasting pan...maybe some Brussel sprouts or broccoli too...I eat really low carb, but stuffing is just so good. I have corned beef, red skinned potatoes, and carrots in the crockpot right now...I'll make some cabbage on the side...yes, a day late and a dollar short.:)

  16. That dinner sounds yummy! I love those mashed potatoes and yes they are tasty:) I bought ONE green blouse on the clearance rack some time ago so I wore it for St. Patrick's Day. I really need a hair appt and yes, I always fix mine before I go too:) Enjoy your day dear friend, HUGS!

  17. Oh, your coffee cups always delight me, and this one is sooooo cute! Your meal looks delicious, and isn't Stove Top Stuffing the best? Your shamrock necklace sounds fun. I do have a few clothes that are green, just cause it's a striking color, but I especially like mint green for the Spring. Your views out your window are just so nice and calming and beautiful.
