Monday Morning Coffee Chat

Good Monday morning, my friends! How are we all doing with the time change? I remember when the kids were babies, and I had them on a schedule. I had the hardest time deciding when to put them down for their naps after changing the clocks. Steve would just shake his head! Those were the days!

I am sitting here with my coffee by the fire, staring out at the slowly falling snow. I have said my prayers, unloaded the dishwasher, and am just about to make breakfast. Later I will homeschool with Flynn, change my bedsheets, and do a grocery order. Dinner tonight is tacos! When one has thawed ground beef in the fridge to use, one makes tacos! You can't go wrong with that! Monday nights are for The Bachelor, so that is my plan after the dishes are done, the counters are wiped, and the little kitchen lamp is turned on.

Oh! And the super pretty, super easy, and super delicious breakfast I made for Steve and me Saturday morning ~ an egg, Laughing Cow Cheese, and spinach roll-up on a low-carb tortilla!

  4. It is funny to me to see the rest of the States weather. I have been tooling around the house in shorts and flip-flops until yesterday. It is a little cooler now, but still nowhere near cold.

  5. Your breakfast looks delicious. I really like Flynn's choice for dinner. Or was that dessert? Whatever it is, it sure looks good. All of your girls are so pretty. Such gorgeous smiles. I think they get that from their Mama. :-)

  10. Well, first, it is so good to finally see you. You are so cute, and have such big beautiful eyes! The tortilla looks so good; I am going to make it! Is that a hard boiled egg in it, or scrambled? For dinner I am making Irish nachos. Slice and bake potatoes till browned, add taco sauce, meat, cheese, and broil till it is melted. Serve with sour cream and green onions.

  14. Hi! I also had a pack of ground beef in the fridge yesterday, so I decided to make a batch of chili for dinner last night. I tried out a new recipe and everyone seemed to like it. I love the look of Flynn's dessert! Dessert is my weakness. I love most all desserts and I love to bake. I'm trying to cut back though - not easy. However, I will be making a chocolate cake for Charlotte's birthday this coming weekend. I hope you have a great week! Text me sometime. I'd love to chat more!

  18. I made beef tacos last night also. It's been so long since we've had them and they did not disappoint. We haven't had any snow since right before Christmas I think. Have a great week!

  22. I'm so glad Peyton got snow! And I love that photo of her, she looks happy. That is very cool that Madison has a Bridal shop of her own! Those tortilla roll ups look Yummy. Wow, look at that dessert that Flynn is enjoying! Yea, you can't go wrong with tacos. My son is making some tonight!

    Oh, I also loved reading your previous post about "your story." I knew most of it, as I've been a blogging friend for some time, but it was fun to see the pictures to go along with the story.
