Monday Morning Coffee Talk

 






Good Monday morning, my friends! I am settled in my spot on the couch; the house is quiet except for the dishwasher humming in the background, my coffee is hot, and the fireplace is lit, adding some warmth to this cold room. I snapped the above pictures right before I sat down, just as the lake woke up. I hope you had a lovely weekend, whether cozy and warm inside or fun and cold outside. Some of us snuggled in for mass and football, while others, Peyton and Chris, skied on the freshly packed snow. 

I am happy to report I also did some much-needed bathroom scrubbing on Saturday. As I age, I have to be in the mood to clean. I am slow getting started, but I always feel so good once I do it. I love the feeling of having super clean and sparkling bathrooms. Even if that feeling lasts all of an hour or so! Today will be a relaxing day with homeschooling, laundry, leftovers for dinner, and The Bachelor this evening. 

Oh! Thursday, January 27, is National Chocolate Cake Day! As you know, we love to celebrate all things holiday, so why not celebrate cake? This easy cake is a favorite in our house, so I thought I'd share the recipe with you, just in case you want to celebrate chocolate cake too.


The cake is known as Depression Cake. The recipe I use is right HERE. I double it and bake in a 13x9 inch pan for our family. The frosting recipe I like to use is a sour cream chocolate frosting that pairs perfectly because it is not too sweet. I found it in an old cookbook called The Cakemix Doctor. Just combine 1/2 stick of butter and 3 oz. Semisweet chocolate chunks in a small saucepan. Melt over low heat for about 3 minutes until smooth. Let cool and stir in 1/2 cup sour cream. Put this in a mixing bowl, and on low speed, mix with 1 and 1/4 cup of sifted powdered sugar and a tablespoon of hot water. (I always sift the powdered sugar!) Then add 1 more cup of sifted powdered sugar and 1 more tablespoon of hot water. Beat until it is the right consistency, and then add1 teaspoon vanilla extract. Beat a bit more until smooth. We like to refrigerate this cake and set it out before serving.

  2. We still have only had a dusting of snow. Your pictures are gorgeous. I would be looking out the window all day long.
    I have used that same cake recipe but have not tried the Sour Cream Chocolate frosting. Thank you for sharing, I will be making it this week.

  3. I remember Depression cake from when I was a kid. Saving the recipe because I haven't had it in years.
    Snowing hard here this morning and I had to drive hubby to the airport at 5am with unplowed roadways. UGH. Glad to be home. Didn't do the bathrooms yet but I did deep clean the kitchen this morning and that feels good! xo Diana

  6. Happy Monday, friend! It sounds like you had a warm and cozy weekend! We've quarantined since Friday when our daughter tested covid positive. Thank goodness her symptoms have been minimal (fatigue and upset stomach for the most part) but she's definitely feeling better and will back in school on Wednesday. My husband hasn't had any symptoms. I had a few symptoms (sore throat, fatigue and post nasal drip) last Thursday and Friday, but I tested negative. So either I received a false negative of just had a fluke little virus for two days. Who Knows? Anyway, I'm ready to get back to normal life that's for sure. Your chocolate cake looks delicious!   11. That cake looks absolutely heavenly. I was never a chocolate cake eater until I met my husband. Just never cared for it. He loves chocolate cake, and now I do too. And for me the darker the better. Yes to putting a cake in the fridge. I always think they taste better. It's funny, even when our house is messy as long as both our bathrooms are clean and sanitized I feel like the house is clean. Nothing like sparkling clean bathrooms.

  15. Oh, that chocolate cake looks so moist and delicious. I forgot to put chocolate cake on my list - it's actually my favorite dessert with white frosting. It looks like a foggy day outside your window. Such lovely photos. I know what you mean about being in the mood to clean. It's hard to get up and go, but when we're finished, it's a nice feeing, isn't it?

    Hope the rest of your January days are good ones, and I can't believe it's almost February! And I wish I had a piece of that cake to go with my coffee right now!
