Favorite Recipe Friday and a Giveaway!

Hello! And Happy Friday, my friends. I hope you had a lovely, cozy week. We passed a touch of something around here this week and therefore spent an inordinate amount of time sleeping. The symptoms were mild: a quick bout of sweating, dizziness, exhaustion, and a stuffy nose. Thankfully, we all feel better, no doubt in part to the excellent care we experienced. Rhett's girlfriend Kyrstin made us a delicious dinner Monday night, and Madison brought another delicious meal for us on Valentine's Day. And now, the windows have been opened, the sheets changed, and the Lysol sprayed. 

I'm sharing this recipe from a couple weeks ago, and I may have shared it before, but it is easy and delicious. It is Enchilada Casserole, and I will link the recipe down below. 




I also wanted to share two beautiful books I recently read and loved, written by two lovely Blogging friends! Each of these books is beautifully written and filled with helpful advice and heart-touching words that you will reach for again and again.

  1. I'm glad you all are feeling better. My son and his family have a virus as well this week. We've not been with them except praying 🙏 for their health. The books look good. We went to Red Robin to celebrate my birthday on valentine's day as it's my birthday too. I'll share more on my blog soon. Happy weekend. 😊

  3. Glad everyone is feeling better. I know bronchitis is making the rounds at my work. And thanks for the idea of opening the windows, making a mental note to do that as soon as it gets a bit warmer this weekend. Both those books look beautiful and intriguing.   5. So sorry sickness found your house. I have been down with no voice and congestion for over a week. Today is the first day I don't sound like Minnie Mouse. LOL I LOVE Mocha's sweaters! He is just so cute!
    Both of those books look really good. I would love a chance to read them.

  6. This is my first look at Mocha, she is adorable! And the P.J.'s!! So cute! Also what a very cute gnome. I love them and have several myself. The casserole looks so yummy.   10. I'm glad you're feeling better at your house. I've still got whatever bug I came home with. I'm coughing like crazy now ad still the nose thing. Dennis says if I'm not better by Monday I'll need to call the doctor to make sure it's not bronchitis.
    Mocha is a little cutie. Love the pj's.

  11. Mocha looks so cute! My Minnie does not like to wear any type of sweater. The enchilada casserole looks good. I have always made mine with corn tortillas. Our family recipe has us heating the tortillas in hot oil for just a couple of seconds, then place them in the sauce and then layer. It tastes so good, but maybe not the healthiest. Then we layer with meat and cheese. My family prefers green enchilada sauce with chicken. They come out very moist and tasty. Glad to hear you are feeling better!

  15. Billie Jo, you are so sweet! Thank you for sharing the blog and book! Mrs. White has been one of my favorites for many, many years and I have several of her books. I hate that you've been sick, but it sounds so similar to something my son had last month. He specifically mentioned the dizziness. I'm glad it was short-lived and you're on the mend!

  18. What a generous giveaway Billie Jo! I too recently purchased Mrs. White's newest book, but have not read Debbie's book. I can vouch for Mrs. White's book, it is just a very special encouragement for women at home. She has so many wonderful suggestions and ideas. I'm sorry you were all under the weather, but thankful it passed quickly. I love anything enchilada, and have made a version of your recipe in the past. So yummy, and easy to put together!   24. The enchilada casserole looks really good. And I noticed the gnome in the corner of your fireplace. That is the cutest thing, and I'm such a gnome person myself.
