Thursday Thoughts

Today I'm thinking about...


...not taking feeling good for granted! We are all on the mend here. The sheets are washed, the Lysol sprayed, and the door opened to let the fresh...if still yet chilly...air in. I have to tell you, I am so thankful to be cooking and schooling and folding laundry again! Thanks for the kind words and prayers...they were felt and appreciated. : )

I am also thinking about switching gears...from St. Patrick's Day to Easter! They are super close this year, which means we will be saying goodbye to all things green, and pulling out the bunnies and eggs soon. As in tomorrow. But before we do, here is a look at the past week in our country home...


Spring is near...and soon we will be swinging and rocking and sipping drinks out here.
(Instead of rushing out without shoes or a jacket to snap a quick picture before running back inside.)


I couldn't wait to dig out the Easter mugs...this one is just too cute to not use. : )


Sunday morning was the first I felt like eating in awhile...so French Toast it was.


And then it was the night before St. Patrick's Day...and we celebrated with a special bedtime story and snack. Peyton made chocolate chip cookies with green chips. Always buy an extra bag at Christmas, and pick the red ones out. : )


St. Patrick's Day Breakfast was fun...
and everyone has the fruit dip recipe, but just in case you don't...mix 8 oz. cream cheese with 8 oz. marshmallow cream. That's it. : )


My littlest leprechaun and I set the table while the big kids worked...


and our Irish dinner was delicious!!! Simply chop up some red potatoes, some cabbage, an onion, and some bacon. Cover with foil, and bake in a 400 degree oven for an hour or until done. I put it under the broiler for a minute to crisp the bacon too. Then I steamed some carrots and pan fried some kielbasa and we were set!


After dinner, we played some fun games...Uno Attack, anyone?...and took the obligatory photo. We were so happy Grandma came to celebrate with us! And if you see an extra face there, that is Madison's BFF Jessica. : )


We finished off the night with Peyton's traditional Lime Jello Cake for dessert.

And that is a wrap on St. Patrick's Day 2015!

  3. You still have snow!! No snow left in MN! A little chilly but that is ok when kids still are in school. It was so hard to go to school when they just wanted to be home and play!

    That bunny mug is sweet!

    I need to post my green pictures also. It was nice having all my kiddos home!

    I"m so happy to hear you're feeling better. Now you can jump in and enjoy getting out the bunnies and welcoming Spring with energy and fun. I loved all of your St. Patrick's day touches and I may need to nab a few of your ideas for next year (LOVE that breakfast rainbow - such a fun idea!!)

  11. So glad that you are all feeling better. It certainly does make you appreciate good health after you've felt miserable and crawled out among the living again. I should really appreciate it more often.
    You have more snow than we do. All brown now and some rain would help spruce things up a bit. All in good time. Happy Spring!

  15. So much fun!! Everything looks so festive and yummy. Peyton's cake looks so delicious! And I love your Easter mug so much. It's amazing how much cheer there is in just drinking something good out of a cute mug that makes you happy.
