What's For Lunch

I have been on a salad kick lately. I go in streaks with eating, but this one has lasted longer than most. When it comes to breakfast and dinner, I am fairly consistent. Lunch, however, is a different story. Either I skip it, which results in an afternoon of grazing on anything I see as I pass through the kitchen, or I decide to wait until dinner and am famished by five and we generally eat dinner at seven. This summer though, I am eating salads. Actually, the same salad. And I am not tired of it yet! I know you do not need a tutorial on how to make a salad, but I thought I would share mine here in case you wanted to change yours up a bit. Or laugh because I am doing a whole post about making a salad.

First I grab all my ingredients...

Then I wash my produce really well.
And dry it even better.

I like to combine iceberg and romaine lettuce.
And then I throw in any tomatoes I have.
This time of year, garden tomatoes are a bonus!

Next I add one slice of lunchmeat and one slice of cheese.
It varies depending on what we have on hand.
This week it is Virginia ham and Provolone cheese.
But my favorite is Gouda. : )
Oh...and just to be fancy...I roll it up and slice it. : )

Just a little.
I like to pretend I am on Food Network.

I add a handful of these...

And there you go.
The secret though...see that dressing???
The. Best.
Oh and one more thing.
I force myself to sit down.
And eat slowly.
And enjoy.

  1. I love a good salad for lunch! Sarah has been making a homemade balsamic vinaigrette that is soooooooo good. She branched out this week and made an Asian dressing that is equally good. I usually take whatever greens we have on hand (lately I've been buying a prepackaged mixed greens with all sorts of leaves in it. It's reasonably priced at Aldi and if it's pre-chopped my odds of eating a salad are much greater. I'm so lazy.) And then I throw on sunflower kernels for crunch and either goat cheese or feta cheese depending on what's in the fridge.

I love salad, and could eat it every day (really should ;-) I made one for a get together and everyone loved it...Mixed greens, mandarin orange slices, blackberries, pomegranate seeds and homemade poppy seed dressing. So yummy. Is that raspberry dressing gluten free/ dairy free? Need to look that up. Sounds yummy.

  3. I've been eating tomatoes and avocados with lemon juice on top. So simple. Then for "dessert" i have a rice cake smothered with sugar free jam. :) But it's still tough not to graze all day, like you said.

  4. That salad looks great! I love wraps. I haven't had one lately. But for some reason when I seen your salad it made me crave a wrap. I also like a good old sandwich. Boring.. I know!

  5. I enjoy salad. My new crave is grilled chicken. I will marinate and grill up a few. Then I thin slice them and freeze. I can then grab several slices, microwave and add to my salad. Yum!

    Your salad looks yummy! I love the little rolls of ham and cheese - we deserve to have it look fancy! I usually have something like salad or half a sandwich for lunch. I am dieting (eeekkk!) so I just try to basically eat the same things, just less of them. Today, I will have a taco salad, using left over taco meat from last night . . . we eat lots of leftovers.

  11. Billie Jo, I try to eat salad every day for lunch. I feel so much better when I do. I often add a sliced hard boiled egg, a bit of cheese, and lunch meat too. A bit of Ranch dressing for me. xo

    I don't eat a lot of salads as they tend to make my tummy hurt, but I do try to eat a few through the month. I love hard boiled eggs on mine and yes that dressing is delish!!
    I love homemade chicken salad on crackers. I'll eat that everyday if I have cooked chicken on hand. Yum!

  17. Oh goodness, your salad looks yummy! I've decided that salads are always better when someone else makes them. LOL My easiest 'go to' salad is a bag of veggie lover salad mix, a can of rinsed and drained red kidney beans, and a can of mandarin oranges (drained). I use blue cheese dressing and I just love this stuff!!!

  18. And why not, do a whole post, on salad making??????? :-) Salads are delicious and healthy and we all, should eat more of them.

    Sad to say, I do not "like" to take the time, to make one properly. -sigh-sigh-sigh- No excuses. None.

    We try to buy organic fruits/veggie, but of course, you still have to wash them carefully. What I am guilty of not doing, is the drying part. -more sighs- Also no excuses.

    Let's hope your lovely post, inspires me to 'up' my salad making progress!!!!

  19. Yummy! Your salad looks delicious!!!! I must find that Kraft dressing! My lunches are usually pretty boring...a turkey sandwich, cup of soup, a salad (but not as good as this one) or leftover pasta. Sometimes just tea & toast will do. I need to be more creative!
    I love Madison's blog! She just did a post about how the "sun is not her friend". I loved it because I've struggled with this my whole life! She nailed it ♥ I enjoyed seeing Nicolas in her last video and hearing his voice. They are the cutest couple! ♥

  20. I usually have a Salad, for Lunch and with dinner, I crave them big time. Do you ever go to an all you can eat salad buffet? they had a huge one in Ca. I forgot the name but not the amazing Salads. We had one here called Soup or Salad that I Loved. sadly, they recently closed down, they made a side of Pasta linguine with corn and cheese that was so yummy. I make my salads a lot like yours. Iceberg and green leaf, romaine or spinach. I wash it like a crazy woman, and through in my Salad spinner. note: I just switched to a $5 spinner from IKEA I wasn't sure if id like it compared to the XO brand but it works great. I cut my ham the same way - I picked it up from years ago before kids when I worked and use to go for a salad at least 4 times a week, they cut it that way and I've never looked back hee hee, I like to shred my jack cheese or have feta. I love Ranch- has to be hidden valley. Italian zesty or house or Blue Cheese but only sometimes because I am picky and it has to be Bobs Big Boy Blue cheese in the jar Very cold! which we don't have here in TX. I have to have carrots -sometimes I use peeler to "shave" bits the way my MIL makes hers and sometimes I add cilantro like her too-never thought id like cilantro in my salad but its good. I have to have tomatoes cut into small pieces or huge if hubbys around so he can pick them out. Lord forbid he accidently ends up with tomatoes in his salad. Lots of croutons, some times bacon bits and sometimes egg or chicken. I haven't added radishes in the longest time. WOW I've written a mini novel about my salads so Yes you could say I like them, or you could use the word obsessed P.S. I've picked up that dressing you use more than a few times and always put it back- creature of habit here. but I will try it someday. and although I like my salads loaded some of the best I've had are my good friends mom who just adds lemon juice and the salad we had on the way to Cancun for our honeymoon with just lime squeezed over it. I wish I could have lunch with you, we would go have Salads! : )
