Monday Morning Coffee Talk...With Muffins!

 


Good Monday morning! I awoke to this beautiful sight and somehow managed to grab my camera and get a few shots before it faded away. I am always amazed at the beauty God shares with us on a random Monday morning. I hope your weekend was nice. I didn't accomplish much other than pack away the few Valentine touches I had around and set out the even fewer St. Patrick's Day things I have! Now that the kids are older, I do less decorating, but I will never not do it. I am a holiday person, and I like a bit of them around my home. 

I am slow going this morning as I had trouble sleeping last night. I don't usually, but yesterday's late afternoon nap probably didn't help. I did shower and drink my water, and I also said my prayers and listened to my anxiety app. So, I suppose I am off to an ok start today. Dinner tonight is a new recipe for citrus salmon with rice and steamed vegetables. After that, we will tidy up and watch The Bachelor. Well, some of us. Steve and Flynn either play a game or watch something I don't like! 

Saturday morning, I found I had an abundance of fresh raspberries, so I decided to make some muffins. I think they turned out great, although I am so far the only one who has tried them. I guess I didn't realize that no one else likes raspberries! I did send some for Madison and Nicolas, so I won't end up eating them all! They are raspberry and chocolate chip, and they are delicious. I am doing much better, but anxiety has kept me up all night more than a few times. I hope you feel better and better as the day goes on and that you sleep well tonight.   5. Billie Jo, thank you for your recent visit to my blog and for your lovely wishes on my wedding anniversary and my new grandbaby. For some reason I have to keep "following" your blog. It seems to always disappear from my Blogger reading list....not sure why, but yours isn't the only one, so it must be a glitch of some sort.

    Yes, God's artistry is amazing. The skies certainly show his creativity in an especially beautiful way. Looks like your lake is still iced over. Do you guys skate on it?

    The muffins look scrumptious. One with a cup of Earl Grey would be lovely.

  6. What a beautiful sunrise! Thank you for sharing. I love raspberries and just bought a pack at the grocery on Friday. I've never thought to add them to chocolate chip muffins, but I do love chocolate and raspberries together. Your dinner tonight sounds delicious! We love salmon and eat it at least once a week. I'm making a sheet pan dinner tonight which will consist of chickpeas, cauliflower, onion and potatoes with spices and olive oil roasted in the oven for about 35 minutes. It's good and fairly easy.   8. Those muffins sound really good! Reading your post reminded me I haven't had much water today. (I usually do really well.) My glass wasn't where I usually put it (I use my water glass for a couple days before washing) and that's when I saw it on the counter, full of water! I thought about drinking water at some point today and that's as far as I got!

  10. What a gorgeous sunrise! So glad you were able to grab the camera and share it with us. Hope you slept better last night. Those muffins look delicious, we used to have raspberries growing against the fence when I was a kid. They are so good fresh off the vine. I don't buy them often probably because of that and most of them around here aren't fans. Hope you have a wonderful week!

    And I wish you were a neighbor - I'd happily take some of those muffins off of your hands. Or better yet bring over a fun new tea we could both try and share with your muffins (raspberry is my favorite 😋) But I'm definitely going to steal the recipe. They sound wonderful!     Man, that sunrise is gorgeous!! Of course, you know me...sunrises and sunsets! I don't decorate much anymore. I don't think I put up anything for Valentine's Day. I have a grandson who was born on St. Patrick's Day, so we do celebrate St. Patty's! The muffins look and sound delicious! Who doesn't like chocolate and raspberries?! Enjoy the Bachelor! I will confess, I have never even seen the Bachelor, can you believe it?! Have a great week.

  14. I would certainly love one of your raspberry chocolate muffins, yum! I am tempted at times to nap, but realize it can hinder my sleep later, too. So nice to enjoy family time with your family. Such a gorgeous sunrise, wow! I just love how God paints the skies for us morning and evening with new, never seen before art that will never hang in a gallery, but live on in our souls!   19. Your raspberry chocolate chip muffins looks so Yummy! I wish I had one to go with my afternoon coffee. The sunrise photos you took are beautiful. I'm a morning person, so I often see the sunrises more than the sunsets. And I'm like you, I do less decorating now than when my kids were small, but still can't go a holiday without some fun decor.
