Meal Planning And Prepping Mondays







I have always been a meal planner. Not so much a meal prepper. But lately, I have found doing a small amount of prepping on Mondays makes things easier and healthier for the rest of the week. I am old school, I suppose. No fancy spreadsheets here. I just look through my binder and online, choose a few recipes for the week, make sure we have the ingredients and handwrite a simple menu. I try to find a simple breakfast, lunch, and snack to have on hand for the week. This particular week I prepped a delicious baked oatmeal for breakfasts, a simple summer vegetable soup for lunches, and some healthy but amazingly delicious chocolate muffins for snacks. I take a few hours on Monday morning to prep and clean up, and then we are set to go. And then I sit down for a sample or two. :)

  1. Me too Billie. I usually plan out 4 or 5 meals for the week - however I dont normally set a specific day for those meals. It makes life easy. You made pumpkin!!!! And yum, that soup sounds good!!!

  4. Delicious. The grandgirls are cooking and baking...while youngest continues to home school...begins l0th in August...finished 9th...but she will continue algebra/geometry, writing, French in summer. The elder two...one in online college for summer...the other goes to Purdue in August for senior year...she has not complained once about coming home from her semester abroad. Both older girls are delivering food...making so much money...and buying groceries for people. The youngest goes along...I am continuing to school the two little boys-they will work all summer also...they hope to go to school in August in Florida...in the meantime, I am enjoying the desserts, etc., the girls are making. I cook every morning...but I don't bake in the hot weather...even though I have air. The youngest grand girl has the best ever recipe for cupcakes with the best icing...hope you are enjoying your time with your family too. love love your blog...

  5. Yum, Billie Jo. Our pantry and fridge/freezers are full and I hear "Whats for dinner?" Sad but true...no amount of planning etc. seems to work on my crew, grin.

  6. It feels so good to have meals planned for the week! I like to cook once, eat twice, sometimes leftovers, or leftovers remade (like roast chicken one night, made into chicken and rice the next night, etc). It helps so much to have the meals planned out in your mind! Lovely pictures :)

  8. I can't even look at the recipe for anything pumpkin, I swear I gain a pound just drooling. I only plan dinners, brekky is so individualized. Most of us don't eat it, and some eat cereal, some eggs, it varies so much. Lunches in summer, or quarantine or stay-at-home are the same, they just eat what they want when they want. Your soup looks SO good, I want some!

  9. The baked oatmeal looks scrumptious. I don't do any meal prep but I do have an idea of what we are going to be eating the whole week so I don't need to make multiple grocery runs and so that we can be sure we don't have leftover veggies etc going to waste.

  10. I should do more meal prep in the summer. I am usually so good about that during the school year and then get lax. Good inspiration!!

  11. The food you prepared looks delicious. And I smiled when I saw the chocolate pumpkin muffins, oh my. I love anything pumpkin. The vegetable soup looks so good and healthy.
