Good Monday Morning!










Good Monday morning. my friends! How are your days going? We are learning to adjust here day by day. I am cooking in ways that require a bit more thought, which honestly is a good learning experience. Rather than run out and get an item I need, I think about how I can adapt what I have here on hand. Last week I roasted a chicken, so yesterday I made a pot of homemade chicken soup and dug out a couple boxes of cornbread from the depths of the pantry. It was very well received.

Late afternoon rides are becoming a habit around here. It is nice to ride around with no particular destination. Sometimes it is hard, though, allowing myself to relax and not get antsy because we don't have to be anywhere at a certain time. Does that make sense? The fresh air and beauty of nature waking from a long winter nap are good for the soul.

  1. I wish I had a bowl of that soup right now! Comfort in a bowl : ) We've been taking afternoon rides also. It's nice to see the outside world, even from afar, to know that Spring is in bloom and life is happening. Happy new week my friend. Miss you all!!

  2. Such an encouraging post for a Monday morning! I know what you mean when you speak of having to put more thought into the meal making. It is that way here too. None of that, "Let's go to Kurt's for dinner tonight". Instead it is more about sitting down to a good wholesome meal that has taken effort.

    The sun is shining brightly this morning and what a joy it is to be able to move about and enjoy it. I think of those who can't.

  3. It is weird not really living by the clock isn't it? I am trying so hard to keep my kids on their somewhat normal schedule but at the same time it doesn't matter much does it? School goes so quickly now that there's a lot of down time for me to fill.

  6. I love chicken soup...and cornbread. Sounds like a totally yummy meal!

  7. We took a drive to a nearby town to wave at our newlywed granddaughter and her husband today. We took all three dogs along to get them out of the house too.

    Chicken and noodles for dinner. With orange jello and cool whip!

  9. We are doing good over here as well just taking every day one by one. I know I'll be sad come Easter Sunday and the rest of the family isn't able to join us but I'm thankful for that we are all still healthy which is most important!

  10. Your chicken soup looks delicious. That lake picture is so beautiful. We used to drive by two lakes (very close together) to get my youngest son to his baritone lesson and I was just telling him how much I missed that drive (and sitting reading my book listening to his music while waiting). Perhaps we'll go for a drive this afternoon. Hope you have a great week and a very happy Easter!

    Doing well in Idaho. It is an adjustment, mostly because I'm not able to see my children and grandchildren, who all live pretty close, but we are doing surviving! Cooking is less of a challenge than I thought it would be, I have really enjoyed thinking about and planing my meals a little more than I have been doing in the past. Drives are our saving grace...now if it would just warm up!

  14. We are all Ok over here, Billie Jo. Your chicken soup sounds perfect right now and very delicious. Those afternoon drives can be nice, but I really love the morning ones as the sunrise is starting to come up. That's such a cute picture of your dog stretching. And the cloud photo is just beautiful.

  15. Your pot of soup looks delicious! We are still receiving meals from so many generous families from our parish/school. Even with the turn of events taking place in the world, families have still been having pizza or carry out orders delivered to our home. This is truly a gift...and an expense. I know making a pot of chicken noodle soup and batch of cornbread would be so much more affordable for these families that are supporting us in this time of grief. We are ever so grateful!!!   16. I think that's a comfort I'm providing the kiddos right now as well. Home cooking everyday. I'm grateful I love to cook and bake and it's my love language to them anyways. I know exactly what you mean by the antsy thing. Lol Hang in there sweet Momma. Chicken soup makes everything better. 😉 🍲
