If It Is Wednesday

 

Then last night must have been Taco Tuesday! And indeed it was. This is one meal we never tire of, and it is also a very easy one to prepare. Steve browned the meat and added the seasonings, and I did the rest...This translates to washing, chopping, and displaying several different types of toppings. I opened a couple of cans of vegetables, too! 

But seriously, we all love this and can eat it however we choose. I prefer a taco bowl, Flynn is all about the hard shell tacos, and Rhett will eat whatever he is feeling at the moment. I realized recently that if I lay a piece of parchment paper down and put the toppings on that, I have way fewer bowls to wash! Cleanup is always foremost in my mind.

Last night, we had rice, ground beef, shredded lettuce, cherry tomatoes, shredded cheese, corn, black beans, avocado, Greek yogurt, salsa, and cilantro to choose from. Greek yogurt is the perfect substitute for sour cream, by the way. 


In other Tuesday news, Flynn and I resumed homeschool, and suddenly my days went from coffee and naps to something like this...


We needed a minute to adapt to the change! Fortunately, our homeschool mascot was ready and waiting for us to begin.

  5. We love doing Taco Tuesday around here too but I lack at being consistent with it. I love the idea of the parchment paper because I do end up using a lot of bowls for tacos, too. And that math work ... I got anxiety just looking at it. Math was never my specialty so I really don't know how you do it but I applaud you so much.

  8. Hi friend! I came back to the blog world and I’m so glad I found your blog again!!! We had tacos last night too! But we tried turkey instead of beef and it wasn’t a hit for my boys. They prefer beef or even deer but not turkey lol. But at least they ate it! We started our homeschool day again today as well :) hope we make it lol! I’m glad I found you again! Have a great day!

  9. We're having taco Thursday this week but I do love the idea of one giant sheet of parchment instead of lots of small bowls-- so much less clean up that way!

  10. Yum! You can never go wrong with tacos. It's on the regular over here as well. Love the greek yogurt swap - lots more protein! 😉 I sure like how you roll with the parchment too smart Lady. Wishing you and Flynn blessings over the rest of the school year and that all goes beautifully.

  14. Love the tacos, hate the math, ha, I don't miss it! :). I could eat tacos or chicken fajitas every day and not get sick of them, even if it's only meat, cilantro, lime juice in a salty corn tortilla, hot from the skillet. Anything else is golden, but keep it simple and I still love it. The homeschooling mascot is the best!

  17. The parchment paper is brilliant. I've never used it much but when we were in London, my DIL used it a LOT! It saved a bunch of dish washing so I'm going to be stealing the idea from the two of you. :-) We love tacos too.
    Good for you being back into the homeschool routine. I remember those days fondly and miss having my kids around all of the time.

  18. I love tacos and bought another box of taco shells at Publix today. I enjoyed them so much with my company last week that I decided I need to make them again... just for me!! Maybe tomorrow! Back to school... it does go so fast, though!! xo

  21. Your taco bowl is something that sounds very appealing to me...I really enjoy this type of food. I sure admire you for being able to teach at home. It takes a lot to know all subjects and to be able to teach them. My youngest daughter is a high school dyslexia specialist at a private school..When she tells me about some of her days, it amazes me how in one day, she helps these students with every subject that is taught at the school. Chemistry to Math to English to the Christian lessons. Great idea with using the parchment paper... Happy Thursday..
