Freshening Up A Favorite Recipe








I have enough Italian blood running through my veins that I require a certain amount of pasta in my diet. Ok. Not really, but you get the idea. One of my very favorite family recipes is goulash. Because we are all trying to eat a bit healthier here, I tweaked the recipe a bit, and it tasted amazing!!! 

I simply browned some ground meat~venison~ but if you prefer, ground beef works just as well~with fresh garlic and salt and pepper. Then I drained the excess fat. I added some tomato sauce, chopped onion, bell pepper, fresh rosemary, and fresh oregano straight from the garden. While this simmered, I boiled some veggie pasta. Yep. You read that right. It is really good. Once drained, I added the pasta to the meat and sauce. I topped it with freshly grated parmesan cheese and some fresh from the garden basil. Served with a garden salad, it made a delicious, fresh meal for a summer night.

  1. I do something very similar but use turkey mince these days as we don't have a lot of red meat. The fresh herbs from the garden really do enhance a simple dish.

  2. My mom made the best goulash--unfort. I can't recreate it. I sure wish I could, Billie Jo...yours looks good-I do like the veggie pasta-but I am overruled on that, lol.

  3. Oh my! This sounds really good. Believe it or not I use the veggie pasta a lot for my pasta salads. Add in some cooked broccoli and cauliflower and toss with Italian dressing, and you have a cold pasta salad during the hot days of summer.

    Congratulations to your oldest getting married too! Isn't it fun?!

  5. Not sure about that veggie pasta. I have tried some alternate pastas that are low carb and they were just weird! I do love those plates though and I'm glad your family liked your new healthier version.

  6. Mmmmm! Pasta. Definitely an Italian's comfort food! :) But for lighter days, I know this may sound odd, I actually eat my tomato sauce over a baked sweet potato. My family thinks I'm crazy but I love it.
    I've never used venison in my Italian style meals though, may have to try it.
