Our little elf Zip is back, and as cute as ever! He is a very low key kind of elf. He doesn't create messes or chaos. He just hangs around and brings magic to our home. And for that, I am thankful. In other news, I made the BEST new dinner recipe last night! I say that without an ounce of boastfulness. My family literally loved it! It is called Enchilada Casserole, and I will link the recipe below. It is actually a Weight Watchers recipe, but don't let that scare you! It is so good. I served it with some Artisan bread and mangos with bananas. I hope you give it a try!
