I Made A Quiche

And it was good!


It was easy too. If you want a simple, delicious, healthy dish for summer meals, here it is. 



  • 4 egg whites
  • 3 whole eggs
  • 2/3 cup asparagus cut into 1-inch pieces
  • 5 cherry tomatoes, quartered
  • ⅓ cup diced green bell pepper
  • ½ cup freshly shredded parmesan cheese
  • Salt and pepper to taste
Whisk eggs together in a large bowl until smooth. Set aside.
Dice/cut asparagus, tomatoes, and green bell peppers, then mix into the egg bowl.
Add in half of your parmesan cheese.
Spray a pie dish with nonstick, and pour in egg mixture. Top with remaining parmesan, and bake at 350 degrees for 35-40 minutes.

I paired this with a delicious Dole Chopped Salad Kit. Have you tried these yet? I am usually leery of prepackaged salads, but every one of these we have tried has been delicious and fresh. The Sesame Asian is our favorite! Here is a link to the Dole website RIGHT HERE.

  1. That sounds wonderful. I also make a crustless quiche in a non-stick quiche pan. Yours looks fantastic. I love those chopped salad kits. I have never had a bad one either. xo Diana

  2. Hi BIllie Jo. Thanks for the recipe. I think I am going to give that a try. I use prepackaged salads a lot. I love salads and the prepacked ones are quick and convenient (and I am a brave soul ;-)) So far, no problems. I think my family would enjoy this meal, so thanks again for sharing.
