I made this bruschetta to go with dinner, and it was so good!
I just chopped some tomatoes and threw them in a bowl with some olive oil, red wine vinegar, fresh minced garlic, fresh chopped Basil, and some fresh grated Pecorino Romano cheese. (That's what I had, but you could use any kind you have on hand!) I mixed it up and put it in the refrigerator until dinner. Then I put some sliced Italian bread under the broiler until it was crispy. I topped each piece with some of the tomato mixture, and broiled it some more until it was warmed.
I was told this was as good as a restaurant. : )
This is my favorite lunch lately.
I toast a bagel, then add some sliced tomato, chopped Basil, drizzle with olive oil, and add a slice of cheese. This is Asiago, I think. I put it under a broiler until bubbly. And it is AMAZING!

ReplyDeleteWe had a bucket of tomatoes given to us a few weeks ago. Some were too far gone, but we ate the others fresh. Yum yum yum. My husband made pico de gallo, and my daughter made salsa. I ate them as sandwiches and sliced with avocado as well as in salads. What a dreamy flavor!
ReplyDeleteOh yum. I am so thankful for our big shade tree in our backyard that keeps it so the kids can play outside even when it's hot. EXCEPT we can't grow tomatoes and that is a tragedy. Especially when I look at this deliciousness.

ReplyDeleteThis reminds me of my grandparents when I was growing up. Grandpa had an amazing garden and when I was at their house we'd pick warm tomatoes off the vine and toast up bread just like you posted. Summer and tomatoes and a garden bring back sweet memories for me. Love this recipe and all of the yummy summer food! And you know what's next... pumpkin chocolate chip everything!

Wow, does this bruschetta look delish, Billie Jo! My tomatoes did very poorly this year, so I've been buying them at the farmer's market. We love to make salsa and have BLTs with them and topped on salads and also served with scrambled eggs. Anyway you use them, we love them! ♥
ReplyDeleteI love tomatoes! Our favorite is to make Caprese salad. Sliced tomatoes layered with fresh mozzarella cheese, fresh basil, EVOO and some salt. Yum. I also just like a tomato sandwich with mayo. Have you ever tried a peanut butter sandwich with sliced tomato? It's really good!!

ReplyDeleteBruschetta is my fave too - have even been eating it for breakfast! Pro tip from my Italian Nonna - instead of putting chopped garlic in with the tomatoes, peel a whole clove of garlic. After you toast (or grill)the bread, rub it with the garlic. It literally melts into the bread and is sooooo good.

ReplyDeleteI just made fresh tomato sauce this week. Unfortunately though, all the rain we've had this past month has ruined our tomato plants and I'm afraid we are at the end of our crop. I am hoping to get a few more tomato sandwiches because that is really my favorite thing to do with homegrown tomatoes!
