Pumpkin Chip Muffins
2 cups of sugar
1 15 oz. can pumpkin
1 1/2 cups oil
3 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon salt
12 oz. semi-sweet chocolate chips
Directions: Combine flour, baking soda,
baking powder, cinnamon, and salt.
Set aside.
Beat eggs, sugar, pumpkin, and oil until smooth.
Gradually add flour mixture and mix well.
Fold in chocolate chips. Fill muffin cups.
Bake at 400 degrees for 15 to 18
minutes.
( I had to bake mine a bit longer.)
Cool in pan 10 minutes.
Makes 2 dozen muffins.

Hi Billie Jo! Have a wonderful time with your family tonight and thanks so much for checking in on us. We never lost power but much of our neighborhood did so the girls are home from school again today. I can't beleive what this storm did to NJ and NY. And I can't beleive that tomorrow is November; yikes. Somehow when we turn the calendar to that month things seem to really pick up like crazy!
