Monday Morning Coffee

 


Good morning! I hope this finds you happy, healthy, and ready to start a new week. I will be, as soon as I get up and pour myself one more cup. I am sticking with the Dunkin Original today, with probably more than necessary amounts of cream. And did I ever tell you that after I pour in the cream, I heat it up in the microwave for thirty seconds? I have to have my coffee hot.

Here in Pennsylvania, we are seeing some heavy amounts of snow. I think some of you will see much, much more! Stay safe, warm, and cozy while it comes down outside. Yesterday, Madison and I spent the afternoon cooking! We prepared four new-to-us dishes from my Cooking with the Saints cookbook. Our January saintly meal was a Mediterranean meal, in honor of St. Anthony the Abbot, and was actually delicious! I honestly didn't know what to expect, mainly because I rarely leave my comfort zone, although I cook a great deal. The dishes in this meal were made with many familiar ingredients but used differently and with different spices. In the end, we all agreed it was delicious! While preparing the meal was time-consuming, it was worth it! We decided the last Sunday of each month will be the date of our Saintly Meal. And, the leftovers went into containers for work lunches today!

    It's a blustery and cold day here in Alabama, hopefully we can see some snow this year before winter is over. It's been a few years since we have.
    Also the meal you and Madison made looks wonderful! Have a wonderful week!

  4. I like my coffee with a lot of half and half also, and I too heat it up in the microwave after! I love that you have a saints cook book and are making the meals once a month! Your food looked so yummy. Happy Monday my friend. Hugs, ~Juli

  5. Duh! why don't I do that with my coffee?!? I'm always complaining that my coffee is cool ~ I mean, yes.. coffee is coooool, but I hate it cool in temperature. I will take a few sips and reload the Kurig and add more coffee to my cup. I'm seriously shaking my head right now. hahaha.

    Everything looks delicious!! It's fun trying new things when you have some helpers. : )
    Last week I made a few new pinterest recipes that were not very good at all.

    Happy February. And yay! we got some snow too!!!!

    I'm with you, I rarely venture outside my comfort zone on food. But, I love new cookbooks and sometimes try new dishes and always love them! It's fun to cook with your daughters, and Madison already sounds like a wonderful cook! My husband likes his drinks really hot, I like mine...not so hot, so sometimes he microwaves his halfway through. Have a wonderful Monday!

  7. Your meal looks delicious! We stick mostly to the tried and true around here as well. Glad it was a success and that you found the start of another fun tradition. I warm my coffee up when it gets cold but I've been known to drink it room temperature or even cold. Hope you have a great new week!

  8. How wonderful to cook with Madison, it certainly looks like a very tasty meal. I am more of a tea drinker and can drink it either hot or cold. We have had a little sprinkling of snow which disappears as quickly as it arrives, thankfully.

  10. We heat our coffee and drink it hot but I think it tastes better to heat it before putting the cream or anything in it. Hmmm...I may try heating it last! Happy Monday!

  11. Happy Monday and Happy February! We didn't get much snow here for as long as it has played around at it. We can still see the grass. Cooking with the Saints. What a neat idea! And that meal looks delish!

  15. Here in Colorado our day will be in the low 60s. It's not unusual to have a touch of springtime in February. And later in the week we're expecting snow, so we'll get a taste of winter, too. Your meal looks delicious, and the cookbook sounds interesting.

  16. Like you, Billie jo, I like my coffee hot, since I make my coffee in a percolator, I heat my cream, and warm my coffee cup in hot water, all worth it! ~wink~
    Your dishes look so delicious I like the idea of setting side a special time to prepare new dishes, because I like to stay in my comfort zone too!.

  17. Your saint inspired food looks delicious! We are on snow day #2 this week after getting snow all day Sunday and overnight Sunday night. Then it started snowing again last night around 8 and everything was refreezing some had lots of ice on the road. Bill said the roads were awful this morning when he left for work at 8:30. Kids are happy for the snow days. Lol Hope you are having a good day my friend!

  20. Yes, my coffee has to be extra hot as well. I was gifted a Breville Milk Frother for Christmas that I am thoroughly enjoying. It has several settings, so I'm able to get the milk really hot. Helps to keep my coffee hot much longer. Do you have a frother?

  21. The Cooking with the Saints cookbook is something else. How special is that? Mediterranean food is so delicious. Everything looks wonderful. You and Madison did a great job preparing it all.   22. I think it's always wonderful to branch out of our comfort zones and try something new. You never know when you may find your next favorite something! 😉 And what a wonderful way to spend quality time with a kiddo. You like your coffee just the way I do too! Lol I love my frother now because it heats up my creamer and makes it frothy! Pretty cheap on amazon and well worth it. Use it every. single. day. ❤️
