November Days And An Easy Dinner

 







Usually much more muted, November is certainly showing her beauty this year. It is cold but sunny, and the leaves are hanging on quite a bit longer. This week we noticed the dark coming earlier, the evenings lasting longer. We gather together after dinner, light the fireplace, and watch tv together. 


Dinners are heartier these days. This week's favorite was an easy Baked Penne. I boiled some penne, drained it, and put it in a baking dish. Then I topped the pasta with fresh mozzarella slices and our favorite pasta sauce. Finally, I shredded fresh parmesan, covered the whole pan in foil, and baked until it was all hot and bubbly. I added an easy Chopped Salad Kit and these delicious Dinner Rolls

And finally, I leave you with this shot of our evening visitor last night. Isn't he amazing?! And not the least bit concerned with us!

  1. What a lovely view of your lake!! Coffee on the back deck every morning would be such a beautiful way to start the day.

    My parents live on 5 acres in rural western Montana. They always have deer in their yard. It has become "old hat" to them, but I go wild about it every visit. I think deer are so cute, and to have them so up close and personal is a treat for me. This past June, I was able to see the hours-old babies following after their moms.

  2. I love your fall photos! They are so serene and pretty! And your meal looks yummy. I love using those chopped salad kits for a quick lunch. Great picture of the deer. We live on a too busy road to have deer but we have had many birds visiting our front porch the last couple days. This weekend I have to make dinner for our church's youth group which Rebecca attends. Have a great weekend!

  4. Hi Billie Jo - what a peaceful post. The photos just give a sense of calm and then sharing your meal with us makes it feel warm and cozy. : ) And, to have a deer feel right at home in your yard is amazing. Like you, we are beginning to clean up the outdoors and put things away. The trees here are also holding on to the leaves a lot longer than they normally do.   5. I love the photos - especially that one of your visitor. Great shot! That easy dinner sounds good and I may be giving that one a try. I would sure enjoy it. Glad to hear that things are going well for you. I am reading a suspense/mystery book you might like - The Empty Nest by Sue Watson. Maybe you have already read it. It's pretty good so far.   6. I love love love your yard, and view, and it's especially pretty right now! We are enjoying this perfect fall weather here in NY too, crisp sunny days, and cold cozy nights. I still get a kick out of wildlife, love when the deer wander into the yard, I grew up in the suburbs ha.

  7. Oh, that view! I would never get tired of that. I have a friend whose home overlooks a lake and she has created such a cozy space on her porch that she had her husband close it in with plastic in the winter and she has an electric fireplace out there. She sits on her swing and enjoys the view in comfort all winter long.

  8. What a beautiful view, Fall colors are the best. Your meal looks so yummy and don't you just love 10 minute meals. I'm starting to crave comfort food as our temps are dropping too. Soups, pasta, potatoes you know, all those good carbs haha. I love seeing the deer in your yard, they are so peaceful and lovely. Have a very cozy weekend!

  13. I like seeing the fall leaves on trees while out driving. With sunglasses on the colors look more intense than when sunglasses aren't over my eyes. I like your trees. I need to get a few things finished including my prayer shawl, fix sewing machine and sew a few hems, one on jeans and a curtain. Always something to do at home. Not working now so I need to get my photos for calendars printed out this week. Have a good week and stay warm and safe!

  14. A buck! What a special gift that was to see. Autumn is still lingering there, and it's so pretty. I love how you manage to get pictures of the little birds at your bird house.
