Fresh Strawberry Muffins
Ingredients: 1/2 cup softened butter
3/4 cup sugar
1 egg
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1/2 tsp. vanilla
1 1/2 cups strawberries, chopped
cinnamon sugar
Directions: Beat butter and sugar.
Add egg and mix well.
Stir flour, baking powder, and salt
in small bowl.
Add this and milk alternately
to butter mixture. Add vanilla.
Stir in strawberries.
Sprinkle with cinnamon sugar.
Bake in muffin tin at 400 degrees
for 20-25 minutes.
Makes 12 muffins.
YUMMMMM! Do you think I could use frozen berries, thawed of course? It would probably turn my muffins pink, which Maggie would delight in :)

I just made strawberry muffins for the first time last week. A little different than this recipe so I'll have to compare. I loved them though. I had never baked with strawberries before. I was wondering how long the strawberries stayed fresh after baking. I guess the answer is to eat them all right away and it won't be an issue:)
ReplyDeleteOh my more yummy recipes to put into my Billie Jo cookbook :) I do not think I have had strawberry muffins before. We have a strawberry stand just down the street that I visit often. How long do these muffins last and do you keep then in the fridge?
