Favorite Recipe Friday

Hello! And Happy Friday! I am snuggled under a throw with my pups and my coffee, and although it is only 10:00, I have already returned from my doctor's appointment, showered, and unloaded the dishwasher. It was a regular checkup, and thankfully all went well! Except for the fact that the scale there is different than the one here. Hmmm. I always schedule the earliest appointment for a couple reasons. First of all, the office is usually empty and super clean, and in addition, I don't have to sit and wait all day to go. I can go, come home, shower, and be back on the couch before Steve leaves for work! 

Winter apparently got the memo and is making up for lost time here in Pennsylvania. We had snow earlier in the week, are supposed to see a storm today and possibly another Monday. My weekend will consist of cozy clothes, books, and coffee. Yay!  





Our favorite meal of the week was an old favorite, Grandma Flo's Lasagna. It is Steve's mom's recipe and his very favorite. There are many ways to make lasagna, and this one is straightforward. But it is so good! I shared the recipe once before and will add the link to that down below. We serve it with fresh bread and sometimes a salad.

Favorite Recipe Friday and a Giveaway!

Hello! And Happy Friday, my friends. I hope you had a lovely, cozy week. We passed a touch of something around here this week and therefore spent an inordinate amount of time sleeping. The symptoms were mild: a quick bout of sweating, dizziness, exhaustion, and a stuffy nose. Thankfully, we all feel better, no doubt in part to the excellent care we experienced. Rhett's girlfriend Kyrstin made us a delicious dinner Monday night, and Madison brought another delicious meal for us on Valentine's Day. And now, the windows have been opened, the sheets changed, and the Lysol sprayed. 

I'm sharing this recipe from a couple weeks ago, and I may have shared it before, but it is easy and delicious. It is Enchilada Casserole, and I will link the recipe down below.

Friday, Flynn, And A Favorite Meal


Good morning! And happy Friday, the first one of February! Kirby is thrilled, as you can see. This week was one of quiet and transition. February always helps me move from missing all that is Christmas and into thoughts of Valentines, Mardi Gras, and Lent. And so it goes. Soon I will be planning what we will eat for the Fourth of July and thinking about how long I can wait to put up my autumn things!


This girl. This is our baby, Flynn. That precious little girl with the great big hairbows is suddenly a teenager with the absolute sweetest, funniest, kindest heart. Flynn and I share our days drinking coffee, watching Spongebob and the Walking Dead, laughing at memes, and schooling. She is a lover of all animals, especially Madison's pup Draper, video games, music, art, pizza rolls, and homeschooling. Really! I thank God every single day for giving us this child with a beautiful smile and the kindest heart, and am loving watching her grow into a lovely young woman.


These taco roll-ups are one of her favorite meals, by the way. I will link the recipe down below! And lest you think we are fancy~smancy here, let me show you how we serve dinner on any given weeknight!

Puppies And Christmas And An Easy Recipe For Dinner

 

Hello there! It has been some time since I shared a selfie here, but I snapped this one yesterday before we left for the vet. This little lady had a follow-up visit for her dental surgery last week. She is doing great! The vet tech said everything was healing perfectly. 

She still likes the extra attention, though. And Flynn is happy to oblige.

Kirby isn't overly concerned. He did, however, miss Mocha greatly when she was gone. 

Looking for an easy but delicious dinner idea? This one is so good! The other night, I made homemade chicken tenders with fresh green beans and added an old favorite, Kraft Macaroni and Cheese, on the side. I am all about keeping it real here, and I really do like that orange powder in the blue box! I will link the recipes down below.

How is your Christmas planning going? You may be done shopping but haven't started wrapping. Or are you still shopping? Are your cards written out? You may not be sending cards out this year. How about your baking? Have you started yet? Or are you not baking this year? (Maybe you have a daughter who loves baking and is baking all your cookies for you!) No matter. Do your own thing and as much or as little as you wish. The older I get, the more I realize that I don't have to repeat the same Christmas year after year. Times change, and children grow. Things can be simpler. Christmas will come, and it will go, whether I iron my napkins or not. Ok. Bad example. I am not going to iron my napkins. Ever. But you get the idea. Show yourself grace this Christmas season, my friends. And enjoy some quiet time by the tree with a throw blanket and a cup of tea.

Cozy Dinnertime!!

What's that, you ask? Cozy dinnertime? Indeed. It is time. The temperature here in Pennsylvania has dipped enough for the annual switch from summer dinners to cozy, fall ones. First up, Irish Stew! 


We enjoyed this last night with some store-bought loaves of sourdough bread. It was delicious! The recipe is found HERE. I followed it completely, except I realized all the boxes in the pantry were chicken broth, not beef broth. According to Madison, that made it even better!

Because. Snow. And...cozy.

With Apologies To Rachel Ray

 


I am a meal planner by nature. Every Saturday, I check the calendar for the upcoming week, look around and see what we have in the pantry and the fridge, and decide on what meals to make. Usually. Sometimes I don't. Those days, I throw something together at the last minute so we don't resort to takeout again. (Trust me. We do that too.)

This meal is one I often make when I need something quick and easy. And good. It is a simple tortellini alfredo with chicken. The express version! I made it last night when I looked at the clock and realized what time it was! I had a couple bags of Barilla Cheese Tortellini and two jars of Bertolli Alfredo Sauce in the pantry. I stock up when they are on sale for just this reason. I grabbed a bag of fully cooked chicken breast strips from the freezer and heated them with the sauce while the pasta boiled. When the pasta was done, I drained it and added it to the sauce. I added some frozen broccoli and fresh Italian bread, and we had dinner in less than thirty minutes!

What's Inside my Dutch Oven And Flynn Cooks Dinner

Hello! Yes, I know we are smack dab in the middle of cookout season, and believe me, we are enjoying all the hotdogs, hamburgers, and chicken you can imagine. But, sometimes, we enjoy a delicious comfort meal together on a cloudy day. This past week, Flynn pulled out her new cookbook and chose this recipe to make for dinner. It was delicious! I am so proud of her! The recipe is Chicken Pot Pie from this cookbook right HERE ON AMAZON. I am not affiliated with it or Amazon; I just love it, and so does Flynn! 

 


And then there is this. Last night I made this easy, quick, delicious dinner for my people. It is Shrimp Tortellini, and it is good! Here is the RECIPE. I followed it exactly, except I omitted the horseradish and used fat-free cream. I served it with bread and a Ceasar salad. And the people rejoiced. LOL.

Let's Make Pizza And 31 Years!

 


We are pizza people. When the kids were little, we had pizza every Wednesday night for dinner. Sometimes we ordered out, but usually, Peyton and Rhett stood on stools and spread the sauce and sprinkled cheese from the Chef Boyardee Pizza Kit. (That is actually really good, by the way.) As the kids grew, they helped me broaden my horizons, and we began to make homemade pizza. Honestly, it isn't hard and tastes so much better. It is also a fun family activity, so there's that!

In our search for the best homemade pizza recipe, we have tried several different pizza crusts and have finally settled on one we love. It is actually pizza dough already made from the store. It is in the refrigerated section with the pepperoni and things. It comes individually wrapped in bags; you simply allow it to come to room temperature before spreading it onto the pan. While that is happening, make your sauce. Sautee a few crushed garlic cloves in some olive oil over low heat. I like to use fresh garlic and press it with a garlic press, but minced garlic in the jar works too. Add a large can of crushed tomatoes and a tiny can of tomato paste. Then add some sugar, dried oregano, basil, and parsley. Just do this until it tastes good to you! You can also add some fresh ground pepper. Allow that to simmer for about thirty minutes. Your house will smell so good!

Once the sauce is done, you can make your pizzas! Rhett likes using fresh mozzarella slices, fresh basil, and olive oil. Soo good! I usually opt for a simple cheese pizza. I add freshly grated parmesan cheese first and then freshly shredded mozzarella. Honestly, I get the good stuff here. The Kraft pre-shredded is good for some things, but with pizza, I think it is worth it to pay a little extra for the real cheeses. You will taste the difference, I promise. Have some fun with the toppings! Pepperoni, tomatoes, pineapple, whatever you want! Then bake according to the directions on the crust package. Let it cool a bit before slicing if you can! And be careful not to try it too soon! You will burn your tongue. Ask me how I know.

Before I go, I must post the one photo I have scanned of our wedding day, a sweltering, sunny, magical day thirty-one years ago today! Thirty-one! Looking back, I remember so many things about that day and how wonderful it was. My favorite memory, however, was the feeling I had when Steve and I drove off together, knowing we were beginning the life we had dreamed of since the day we met...This wonderful, blessed life I would be writing about thirty-one years later, while curled up on the sofa in a house on a lake. We didn't know about the joys we would share,  bringing four blessed babies home and watching each grow. We didn't know about the sorrows ahead, the sickness and death of our parents, or the pain of losing a baby before we had a chance to meet her. All that and so much more, the blessings, the laughter, the sadness, and the struggles, were out there, waiting. Those young people knew that they were very much in love. And they would tackle whatever came their way. Together.

Sledding And Pizza Burgers


Good Friday morning! I hope this day finds you safe and sound, especially if you are dealing with the winter storm. Snow is one thing; ice is another. This past week some of us bundled up and went sledding! (Noticeably absent from any photos would be me. I was home watching Match Game '78 and heating up chicken tenders for dinner!) Steve is and always has been the "Outdoor Activities" parent. Thank Heavens. He, Madison, Nicolas, Rhett, Kyrstin, and Flynn had a blast sledding down the huge hill in our neighborhood. Again, I am so thankful my older children love spending time doing family things. It is especially nice for Flynn, and I do not take these moments for granted.






Steve cooks on Sundays, and this past week he made one of his mother's recipes. Mum was a great cook. These are her famous Pizza Burgers, and Steve replicated them perfectly. When I took my first bite, I literally felt I was back in Steve's house when we were dating, having dinner at his house, with Mum making these with a side salad and some cut-up cantaloupe. 

If you want an easy, delicious meal, just brown some ground beef and drain. Add some spaghetti sauce. Mum used Ragu. Always. We had another brand, but it works. Let that simmer while you toast some English muffins. Then, assemble. On each English muffin, place a slice of Velvetta cheese. This is imperative! It must be Velvetta. Then spoon some of the meat mixture on top. Add some shredded Mozzarella cheese, and bake until hot and melty. 


Leaving you this wintry Friday with a picture of Mocha, all snuggled up on my lap for the ride to the beach. Some of us made the six-hour journey to spend a few days at the ocean. It is rainy and cold, but being here is relaxing enough for me. We will swim indoors, eat good takeout food, watch movies, and play some cards. Steve loves the beach. He always has. He works unbelievably hard at a job he loves. His mind is always going. Here, for some reason or another, he can relax. That is why after years and years of renting, we finally decided to purchase our own condo. Now, we can come and go without any planning or worrying. My children also love it here. We hope that they will one day bring their own families here, and Steve and I will sit in our beach chairs, watching the waves as we grow old together.

Friday And A Pasta Dish

 

Good Friday morning! This morning, the sun is shining through the kitchen windows, but don't let that fool you! It is COLD! This past week was a quiet one here. After finally locating my winter boots in the basement under the shuffleboard table, I did venture out to get my hair cut and colored. And in breaking news...

I got rid of the blond. Apparently, years of adding bleach can result in less than healthy locks. Who knew? I decided to return to my natural color and had her cut off some dead ends to start fresh. So far, so good.

Last night  I made an easy, fresh, delicious pasta dish for dinner. I had some freshly chopped ~ from the store ~ onions and tomatoes, so I sauteed them in some olive oil along with some freshly minced cloves of garlic. I threw in some dried basil, salt and pepper, and a little bit of the water in which I was boiling the pasta. I let that simmer while I cooked some penne pasta. Once drained, I added the pasta to the tomatoes mixture and gave it a good stir. To finish it off, I grated some fresh parmesan cheese, and that was that. An easy but delicious dinner that literally took twenty minutes to prepare!

Well, I need to go make our menu plan and grocery order. I also need to call the dentist and pour a cup of coffee. Our weekend looks cold and basically uneventful, just the way I like it. There may or may not be quite a bit of this...
