Monday Morning Coffee Chat

Good Monday morning, my friends! How are we all doing with the time change? I remember when the kids were babies, and I had them on a schedule. I had the hardest time deciding when to put them down for their naps after changing the clocks. Steve would just shake his head! Those were the days!

I am sitting here with my coffee by the fire, staring out at the slowly falling snow. I have said my prayers, unloaded the dishwasher, and am just about to make breakfast. Later I will homeschool with Flynn, change my bedsheets, and do a grocery order. Dinner tonight is tacos! When one has thawed ground beef in the fridge to use, one makes tacos! You can't go wrong with that! Monday nights are for The Bachelor, so that is my plan after the dishes are done, the counters are wiped, and the little kitchen lamp is turned on.

Oh! And the super pretty, super easy, and super delicious breakfast I made for Steve and me Saturday morning ~ an egg, Laughing Cow Cheese, and spinach roll-up on a low-carb tortilla!

Favorite Recipe Friday

Hello! And Happy Friday! I am snuggled under a throw with my pups and my coffee, and although it is only 10:00, I have already returned from my doctor's appointment, showered, and unloaded the dishwasher. It was a regular checkup, and thankfully all went well! Except for the fact that the scale there is different than the one here. Hmmm. I always schedule the earliest appointment for a couple reasons. First of all, the office is usually empty and super clean, and in addition, I don't have to sit and wait all day to go. I can go, come home, shower, and be back on the couch before Steve leaves for work! 

Winter apparently got the memo and is making up for lost time here in Pennsylvania. We had snow earlier in the week, are supposed to see a storm today and possibly another Monday. My weekend will consist of cozy clothes, books, and coffee. Yay!  





Our favorite meal of the week was an old favorite, Grandma Flo's Lasagna. It is Steve's mom's recipe and his very favorite. There are many ways to make lasagna, and this one is straightforward. But it is so good! I shared the recipe once before and will add the link to that down below. We serve it with fresh bread and sometimes a salad.

(One change I do make is I use 2 pounds of ground beef and 2 jars of Ragu Pasta Sauce with one box of lasagna noodles.)

Monday Morning Coffee Talk



Good Monday morning, my friends! Here we are, entering the second week of March. When I was younger, March always seemed insufferably long and uneventful. Sometimes wintery, other times springlike. Now, March flies by just as every other month. I remember something my dear father used to say, "The older you get, the faster it goes!" I get it now!

This past weekend, Steve and I took a little trip to the beach. Just the two of us. It was really nice, and I highly recommend it, especially if you sometimes forget that you are not only Mom and Dad but also people who enjoy spending time together. We mainly did nothing. My favorite, right? We ordered takeout and watched movies. We went out to lunch and rode around. He took a walk, and I took a nap. And we texted all our people who were spending time together back home.


Steve made sure I had my coffee...


I discovered that shrimp tacos with pico are the best thing ever...


And the kids were excited for Peyton to finally get her Shamrock Shake!


Now we are home, back where we belong. I have my laundry sorted and my grocery list made. Flynn and I will homeschool, and I will find something to throw together for dinner. These are my happy things. It is also Monday, which means The Bachelor, but my friend Heather is coming to watch it with me tomorrow night, so I am skipping tonight.
