Are you looking for a super easy but scarily delicious meal for Halloween night?
Maybe something yummy before Trick~or Treating begins?
This Chicken and Avocado Soup is amazing!
Madison made it last night and we all agreed it was a delicious, Mexican inspired, flavor-filled bowl of yumminess.
She also made these delicious, not~too~scary sweet Banana Cranberry Muffins.
They are so moist and perfectly autumn flavored.
The recipes can be found below.
Chicken and Avocado Soup recipe is HERE.
(We cooked some pasta, drained it, and added it to the soup. We did not use the chile powder, and we used a rotisserie chicken to make it even easier! And we topped it with some plain Greek Yogurt.)
Banana Cranberry Muffin recipe is HERE.
(Madison substituted applesauce for the oil.)
Enjoy, my friends!
I have never seen Greek yogurt in soup? Interesting...
ReplyDeleteWe substitute it for sour cream!
DeleteIt tastes the same. : )
I respectfully disagree😊
DeleteHa! I respectfully disagree too! But I guess if your family will eat it, it is a healthier alternative to sour cream!
DeleteI love easy and these look good AND easy. Thanks for sharing.
ReplyDeleteThey both look delicious!

I love your food posts -- well all your posts but the food ones always look so delish!
ReplyDeleteI had soup and muffins one night this past week...it was chili soup and corn muffins. It was good. I love corn muffins with stews and soups. Madison cooked up some good food too. Blessings to all, xoxo, Susie
ReplyDeleteWe also had soup and muffins for dinner this past week, chicken noodle soup and pumpkin muffins! Sadly I cannot tolerate the carbs at this time, rather my ample rear end cannot tolerate them, it's SO hard to make them for the family! But it smelled heavenly in here, and they LOVED them. It's such cozy food!
ReplyDeleteYUM, you make me hungry:) Have a blessed day dear friend, HUGS!
ReplyDeleteOh my, your chicken and avocado soup and muffins look so Yummy. This is perfect for a cozy Autumn night. I smiled at the Greek yogurt topping, as I'm part Greek myself. ; )
