Or...What to make when you realize it is 6:30 and you haven't thought about supper. I am all about meal planning, except when I'm not. Luckily, I keep enough staples around that enable me to throw together a simple, delicious supper for the family.
Last night I grabbed some garlic, onion, and zucchini and sauteed them in a bit of olive oil. Meanwhile, I boiled some veggie pasta and gathered some oregano, parsley, and basil from the garden. I threw the oregano in with the veggies and added some pre-cooked chicken breast pieces and salt and pepper. Then I drained the pasta, remembering to set some aside for a certain little girl who likes everything plain these days and added it to the veggies and chicken. Once this was nice and hot, I added some grape tomatoes, the basil, parsley, and some freshly grated parmesan cheese.
Soon enough, Madison, Nicolas, Steve, and Rhett came home from work, and Peyton and Flynn came in from outside. Everyone washed up and sat down to a fresh family meal on a cozy summer evening. Do you have a go-to

ReplyDeleteMy go-to meal is a visit to the local sub shop. Jersey Mike's can turn any sub on their menu into a salad... sub in a tub, they call it. It is just Joe and me these days so I'm not cooking for the entire family. You pasta dish looks and sounds yummy!

ReplyDeletePasta Bar is our go to if we didn't think ahead. We got the idea on the cruise last summer. I loved going to the Pasta Bar when they cooked it right in front of you and they put in any toppings / add ins you wanted. So we like to do the same. Spinach, veggies, pepperoni, what ever each individual person wants, top with Trader Joes sauce and put it in the skillet for a few minutes. It's one at a time but it's fun and reminds us of the cruise!
