Apparently All We Did Was Eat


Looking through my camera roll, I realized that the majority of the small number of photos I took this week were of...you guessed it...food. Riveting stuff, I know. 

Monday we had a quick change of plans and made homemade pizza and a delicious salad.

Tuesday, Madison and I made these yummy green chili chicken enchiladas. They were good, but the beef ones will always be my favorite!

On Wednesday, we tried a new recipe, and will definitely make it again. It was pasta with ground beef, cottage cheese, and sour cream.

And yesterday, I threw some chicken legs in the crockpot, mixed a sauce together, and let that cook all day. Then, I put some rice in the rice cooker and fresh broccoli in the steamer basket, and dinner was served! We make a meal plan each weekend for the upcoming week, usually for three meals, and this week we stuck to it, except for switching grilled cheese on Monday to homemade pizza. I plan my meals based on what we have on hand, and then buy anything that looks good! Those chicken legs were on sale this week, and I am glad I picked them up for a quick and delicious meal last night. 

Madison made a pan of brownies for dessert and for us to snack on during the week. She also makes the best homemade whipped cream that makes a great addition to my morning coffee.

I was holding on to winter and all the cozy this week...


While Steve was all about spring and walks on the beach!

Lastly, from the files of "How Did This Happen?"

March??? Last week was Christmas, right? March used to be right up there with dentist appointments and high school Physics tests, things you had to get through before something better came along. But as I get older, I don't mind the mostly uneventful days of March that serve as a bridge between the cozy days of winter and the brighter, warmer, promise of spring-filled days of March. Add in some leprechauns and March Madness basketball and you have a darn good month, don't you think?

    I have a sign in my living room that goes with your shirt. It says "Let's just stay home". I put it out every winter after Christmas because that's how I feel in the cold and snow. :)

  4. I get where you'd have lots of pics of food. It's the same over here! Always dreaming on the next meal plan. Everything you made looks so good and is making me hungry! Thanks for sharing the recipes too. Agreed that March is kind of like a nice cozy calm before soaking up Spring's goodness. I love just the dreaming on Spring and anticipation almost as much as when she shows up. 😉💐 Have a great weekend!

  8. Oh yum! Those meals look really good. I made a new thing last night in the crockpot, chicken, cream cheese, dry ranch dressing, cook, then add shredded cheese and then bacon and green onions when the cheese is melted. It was really good. We're trying to avoid carbs a bit because of Hubby's diabetes, but you can serve it over noodles or rice. We had broccoli.
    My favorite place is home. I wish I never had to leave it except to go camping.

  10. The enchiladas look great, nice change from the red sauce. March is shaping up to be a great month, especially with Ukraine's Zelensky getting hung out to dry by Trump yesterday.

  12. Yum...thanks for the recipes. You sure served up some tasty looking meals this week. I was especially eyeing the green enchiladas...The footprints on the beach look pretty nice...Hopefully warm weather is just around the corner....We had WARM sunshine here yesterday! Happy March.

  13. Oh, I always like to see photos of what others are having for dinner. Winter did not seem to fly by for me this year (highly unusual) but maybe because it was colder and we had more snow than usual. I like your description of March as bridge between seasons.   14. Chuck got an air fryer for his birthday last month but we haven't tried it out yet. Your meals look delicious! We've had a few days of blue skies and temps in the 60s! I worked in the backyard for a short time yesterday, then got a book and sat outside and read for a while. It was wonderful. Have a great weekend!

  16. Late February started getting warmer into the low 60 degrees but chilly at night. I enjoy seeing the food you made and ate. I get to the point that I don't eat much bread. Small bread today when Phil and I were at an Ore Right to Life convention. There was good food and I had to find one that was no whole wheat. I got one that was gluten free!! There are flowers blooming, including daffodils.. Have a good weekend!
