Wrapping Up The Week

Well, the first week back to reality passed in a lovely haze of normalcy around here. I hope it was the same for you. Now, the holidays may be over, but that does not mean we can't still be cozy, right? So while Santa may be packed away, the snowflakes, winterberries, and twinkling lights remain. 


Aside from homeschooling, packing Christmas away, and drinking coffee, both hot and iced, I also made a valiant effort to cook a reasonably healthy meal each night this week. On Monday, I started slowly with a sheet-pan meal: Mediterranean Chicken. 


Tuesday was taco bowls, as you already know.


Wednesday was Flynn's favorite: Breakfast for dinner. 


And last night? A meal I have been making since Steve and I got married. Stuffed Peppers!



Tonight? Steve's turn!


My word for the year...So far. So good!



Have a good weekend, my friends. We are heading to the condo for the weekend. I am looking forward to getting some swimming time in. It has been a while! I am also looking forward to getting cozy on the couch and visiting with you all. Thanks for visiting. I am always so happy you do!

  4. My son also loves breakfast for dinner and I was thinking of doing that tonight. I also love making stuffed peppers. Sounds like a great start to January! Safe travels back to the condo and enjoy the weekend.

  7. Stuffed peppers! I used to make those all the time when we were first married. I should try them again. Yours look delicious! Calm and cozy, definitely what I've been desiring lately. Chuck and I talk about retirement a lot now. For him, just a year or two. Me? Maybe even sooner. We're looking forward to 'calm and cozy!'

  8. I do not like breakfast foods at all, but TheHub loves a breakfast dinner on occasion. I need to suck it up and make one while the weather is still cooler. (At least some days are cooler)
    Getting back to normal is great, but I do love the holiday season and miss the lights.

  9. Sounds like your year is off to a good start, Billie Jo. I am going to have to start cooking more now-life is changing around here. I love stuffed peppers but they don't love me. The peppers cause a 'flare' for me- not good. Have a wonderful time at the condo. xo Diana

  10. We had taco bowls last night and tomorrow we're having stuffed peppers (without the cheese though). That Mediterranean sheet pan dinner looks delicious too!

  11. Yum. We also love stuffed peppers. We make a big batch of them using our peppers from the garden. We freeze them and slowly, try to slowly eat them during the winter months. ;-)

  13. Your meals look wonderful. Last night we had meatloaf, mashed potatoes and corn with sour cream. Yum. Today is Dennis's 70th birthday. We're going out to dinner with Brad, Mandy & Piper and I made cheesecake, (his favorite) for sharing with them afterward.
    Have a wonderful weekend at the condo. Wish we could go listen to the waves with you. We sure miss living close to the ocean. Landlocked Nebraska has taken an adjustment. :-)
