Wrapping Up A January Week

January is growing on me. As a teenager sitting in Physics class, I remember thinking how long January felt. After the excitement of the holidays, January felt endless, boring, and cold. Older and wiser now, I still think January feels like a long month. Now, however, I totally embrace it. After the excitement of the holidays, January feels comforting, unrushed, and yes, still cold. Now, though, cold weather means cozy and calm. It means evenings spent inside, with warm throws, books, and movies, and home-cooked meals. I miss my morning walks and swimming outside, of course. There will be time for that soon enough. Now I live in what is, not wanting what will be.

This was indeed a January week. Deceptively sunny, yet the air was cold! I stayed home for the most part, venturing out Tuesday morning for a haircut and color. And some Dunkin coffee, of course. Shorter, because, why not?


This pretty much sums up my week.





Mocha has recovered beautifully from her teeth removal surgery. She is back to normal, and I am relieved. Oddly enough, fewer teeth have not impacted the decibel of her bark. 


Favorite meals this week included a new recipe and an old favorite.



This is a new chicken recipe, and we loved it. It's delicious and so easy. The marinade is only fresh garlic, olive oil, and freshly squeezed lemon juice. For the link, click HERE.

Flynn requested lasagna, not just any lasagna, though. Grandma Flo's lasagna. Steve's mum made this, and I know I have shared it before, but I'll share it again in case you missed it. 

Grandma Flo's Lasagna

Ingredients:
  1. One pound of ground beef
  2. One onion, chopped
  3. Salt and Pepper
  4. One large jar of your favorite Pasta Sauce 
  5. One box of lasagna noodles
  6. One package of WHITE American Cheese slices
  7. Grated Parmesan Cheese
Directions:
  1. Brown ground beef with salt, pepper, and onion.
  2. Drain all fat.
  3. Add pasta sauce and simmer for 15 minutes.
  4. Cook lasagna noodles according to package directions. Drain.
  5. Spray the bottom of a 13x9-inch baking dish.
  6. Cover the bottom with a thin layer of meat sauce.
  7. Layer noodles and cheese slices, followed by meat sauce.
  8. Cut each cheese slice into 3 strips and put one on each piece of noodle.
  9. Layer until the pan is full.
  10. Sprinkle with Parmesan Cheese.
  11. Bake according to directions on the lasagna noodle box.
  12. Enjoy!

  3. I love the new haircut! It's so fresh and so cute. I am enjoying January too, thinking if I make use of each day trying to get back on my feet, by the time the warmer weather rolls around, I should be good to go! The pups are all so sweet!

  5. I considered letting my hair grow, then I saw you cute cut. So, nope!

    Like you, we're prepared whether we get a ton of snow or not. I will head out this afternoon to take my great-nephew home, grab a gallon of my favorite tea and then I will snuggle at home all weekend. Pure bliss!

  6. Happy Friday Billie Jo, First, prayers for safety for you and everyone else in the path of whatever comes of this storm. We had -21 with the windchill this morning with colder to come. We're happy at home though and only need to venture outside for Zoey to do her "business." She doesn't mess around in this weather and wants right back inside. Thanks for the recipes today. I'll definitely be trying the chicken but I don't think Dennis would forgive me if I changed my lasagna. It's his favorite dish!
    I remember after school went back in January, (or work in later years), realizing that there wouldn't be another break until Memorial Day. It was so depressing. Those were in the days that didn't have in-service teacher days, Presidents day, etc. off. We rarely had snow days either. I remember taking the bus in about 18 inches of snow one year. School was a SERIOUS business! Ha! Take care my friend.

  8. Once a friend drove throgh PA and stopped for lunch ordering a grilled cheese and was flummoxed that it came with WHITE cheese. She came home from vacation and told me this (being from PA) and I laughed and laughed and laughed. Good recipe.

  10. Cute haircut, probably very easy to care for which is lovely. I will be warm at work this weekend, but worried about my house. A neighbor will keep an eye on it and I have made preparations, but still! Nerve wracking.

  16. First off, I always feel like a dose of 'down home' when I visit you here. I love your pups and how much you love them and your home life. We are minus 18˚F this morning and MAY get all the way up to zero later today. I am really sick of our cold winter this year. It's crazy and my pups rush out to do their business and rush back inside-especially Coco because her paws hurt if she is on snow/ice for very long. I was walking her and she laid down and wouldn't get up on her feet so I ended up carrying her home. Thanks for the recipes. I should cook today sometime. lol. Have a wonderful weekend- xo Diana

    I had no idea Mocha had been struggling with her teeth, but I'm so pleased that she is recovering well from her extraction, and it must be a huge relief for you. I really hope I haven't missed too much in my absence here.

  20. Nice haircut that you have. Sad that your dog has no teeth anymore or were there only some of the teeth out? Ouchy for sure for the dog. I like the recipes you shared. I bought salmon yesterday that are in cans, and I scanned the link to see how to make the burgers. Almost like making meatloaf. Leftover went into freezer as I didn't use them all. It's been in the 20-degree F range during the night, no snow though. Stay warm and happy!!

    Your hair style is cute and in a style that grows longer easily without fuss. I have been growing my hair out, too, hoping to get to your length by summer.

    Fewer teeth have not impacted the decibel of Mochi’s bark. No, the teeth have no bearing on volume. (smile)
