May Days


 Happy Friday, my friends! This past week finally resembled spring of some sort, although it seemed more like summer with temperatures in the 80s.  I am not complaining, mind you. It is just funny how we seem to jump from winter right into summer now. Truth be told, I am more of an overcast, breezy, leaf-blown October day kind of girl, cozy inside with a pumpkin-spiced candle lit and a big mug of pumpkin-spiced latte by my side. That will come soon enough, I know. For now, I look forward to a change in our daily routine. More outside time, lighter meals eaten on the deck, early morning kayak rides, and days spent reading under an umbrella by the lake. 


Speaking of lighter meals, I prepared one of my mom's signature warm-weather meals this past week, one of my favorites. She called it Refrigerator Delight. It is also known as pulling together anything leftover in the refrigerator and making a meal out of it! I had the makings for a vegetable quiche, an easy salad with romaine lettuce, cherry tomatoes, and shredded cheese, and a  roteressie chicken that I cut into pieces and served cold. I added an old standby, a box of Kraft Macaroni and Cheese, and dinner was served! 


Today in our Catholic Faith, we commemorate May 13th as The Feast of Our Lady of Fatima, the day in 1917 that The Blessed Virgin Mary appeared to three shepherd children in Fatima, Portugal. This feast day was always my father's favorite; he prayed the rosary every day.


This weekend we plan to work outside getting the outside ready for summer. All the kids are coming over to help bring the deck furniture up, clean off the front porch, check and clean the kayaks, and any then Steve is cooking Steak Fried Rice on his outdoor griddle. I plan on scheduling a nap sometime too! My friends, I hope you have a lovely weekend, whatever is on your schedule. Thank you for visiting!

  1. I enjoy some of the benefits of summer like sitting outside reading, grilling up meals and enjoying outside, all the fresh veggies and herbs but my heart belongs to fall and winter.

  2. Yes, light food and grilling is what it's all about. I forgot to tell you I had those shrimp tacos as my mother's day dinner and they were delightful. Thanks for sharing the recipe! Enjoy the shade while looking at the sunshine. :)

  5. How nice that the kids are coming to get the house summer ready. I remember when two of my girls took mother's day a few years ago when it was in the 80's to get all the moss off our roof. What a day!

  7. Same here - we are expected to be up to 90 degrees by next week. No big plans for us this weekend except the farmer's market in the morning. I'm hoping to score some local, organic strawberries. It has been a long week it seems, so I'm looking forward to relaxing and finishing my current read. Hope you have a great weekend!

  10. Oh 80 is too hot for me...I've decided my perfect temperature is 65! I shared your recent recipes with my daughter, and she was excited...we'll be making them this week! I'm running behind in posting, it seems May is always manic...I just can't get everything done (which creates such anxiety). So wonderful everyone is there to lend a hand sprucing up for spring...enjoy Sunday, kick up your feet and spend it doing something you love. Mary

  11. The weather changed suddenly here too. We've had some close to 90 days for a week now, but thankfully will have some days in the 70's upcoming (tomorrow thru Wednesday). Thank goodness, as I still want to put a garden together and I was dreading the thought of doing that under a scorching sun. Will have to work fast in the next couple of days - depending on when the next rain comes. I love the picture of your view of the water. So peaceful.

  13. I am definitely a winter person ( born in Janurary ).I love walking in the rain with the dog,am I mad.I love your blog,have I said that already.Can I come and stay,I need a Retreat !!   16. Oh, I know the Fatima story well, and little Lucia, Jacinta, and Francisco are my beloved Saints. I don't know how many times I've watched the movie. That is very special that your Dad said the Rosary every day. Your vegetable quiche sounds so Yummy. And your candle just warms my heart every time I see it. How special of you, Billie Jo, to remember this day with love every year.
