Monday Morning Coffee

Good Monday morning, my friends! I hope today finds you happy and healthy, and ready for a new week. My Starbucks House Blend is hot and sweetened with some cream, and I am sipping it while snacking on some yummy cherry Kringle leftover from our little Valentine's Day brunch. We enjoy these on special occasions, and they always come fresh delicious. Here in Pennsylvania, we are awaiting another round of snow and ice, and I am just noticing the first flakes starting to swirl outside my window. I have a pup on each side of me, both snuggled under my cozy throw. Today will be a school day for our little one student class, and then I will catch up on some laundry. Peyton is making a big batch of her Tuna and Noodles for dinner, and then it is once again Bachelor Monday! ( Sidenote here. The key to Peyton's creamy and cozy Tuna and Noodles is that she cooks it entirely on the stovetop. No oven is involved, thus diminishing the possibility of drying everything out. )

In other news. Saturday, I actually dressed in real clothes to ride in the car with Steve for our weekend coffee date. We switched it up slightly with a trip thru McDonald's drive-thru. Steve is not a coffee drinker, so Dunkin isn't his favorite...the horror! I survived, however, because McDonald's iced coffee is amazing as well. We also delivered some amazing Peanut butter and chocolate-covered apples to some friends and family for a little treat. A friend of ours has a wife who makes them, and we love them. We left them by the doors and texted everyone, so technically I could have gone in my pajamas and greasy hair, but at least I felt put together for a change.

Sunday, the kids and significant others joined us for brunch, and it was cozy, yummy, and fun. Steve cooked bacon, which I don't eat and dislike because my kitchen smells like it for days, but know everyone else loves it, and isn't that what Valentine's Day is about? I started some scrambled eggs that Madison finished while I put the finishing touches on everything else. Then everyone helped with cleanup, and we visited before the couples dispersed to celebrate the special day together. One guy (Nicolas) cooked a delicious meal for his wife, another (Chris) took his fiance skiing and out to a favorite place to eat. Lastly, another (Rhett) took his girlfriend to a fancy Italian restaurant.

I enjoyed a long nap while Steve and Flynn played a video game together, and then the three of us enjoyed a candlelit takeout meal of Wendy's, Flynn's choice. And sitting there with my Valentine of thirty-three years and our special blessing from God, I could not have felt happier or more blest.

Have a cozy day, my friends.
While all the commotion exists around us, I choose to acknowledge it and then turn my attention to things I can control, and that brings me some sense of peace.

  3. Sounds like an almost perfect weekend over there, your brunch looks amazing! Not sure I've ever met someone who didn't like bacon? I know vegetarians/vegans don't eat it but to simply not like it?! Wow. Guess we all like and dislike different things :) Hope you have a fantastic week!

  4. Hi Billie Jo~

What a fun date night and Valentine's Day! I feel the same way about bacon...smelly...but the brunch looked amazing. We had a quiet day as well, watched a few movies and had a quiet dinner. Enjoy the snow!

  6. What a great sounding weekend! You and my daughter have your dislike of bacon in common. We tease Rebecca that she is not related to us since she doesn't like bacon. Lol That covered apple looks delicious! I hope you are staying warm and cozy! Have a good week!

  7. What a happy weekend! We hadn't planned a brunch, but the grands spent the night Saturday and when their parents came to get them Sunday morning we found the world covered in ice so we made breakfast. It was a fun surprise. We are under the storm advisory, too, but so far we haven't seen anything. It's just dreadfully gray and dreary. I guess we'll have to wait and see if we get missed completely. Stay cozy and safe!

  10. Steve doesn't like coffee and you don't like bacon? I. don't. even. understand. While I love to smell dinner during dinner I hate to smell dinner after dinner. So I get a big pot of water, add lemon slices, cloves and cinnamon sticks and simmer for a couple hours. Voila! No dinner smell. And the house smells fresh and clean. Win-Win!

  12. I was just having a discussion with your gorgeous girl Madison (on insta) about the joys of kringle. Lol And I guess I found the one way in which you're not perfect. You don't like bacon. 😂 Other than that - I think we're basically the same person. Other than I'm jealous of your gorgeous blue eyes! My Dad's side of the family (9 kids mind you) all of blue or blue-green basically some version of blue eyes. And I always wanted them too. But I got hazel (at least there's some green in there). Your spread looked amazing and it sounds like it was the absolute perfect kinds of valentines day. I truly thought my guy was a forever kind of person like I am. But I wasn't as lucky there and believe God has the purpose and plan in it all. So I'm enjoying my life until he sends me a guy that is the forever type. At least I sure hope that's His plan for me as that's in the desires of my heart. Have a blessed week ahead dear Friend. 💕

  14. Oh, you have the vintage Valentine's on your table that we used to send out in school! They are so delightful. This is the first year I didn't send them to the grandkids cause of all the moving I've had. Love the candles on your table, and that brunch sounds amazing. Sounds like such a wonderful Valentine's Day, Billie Jo. And I can relate to Flynn's choice, Wendy's. Have always loved that place. That cherry kringle looks amazing. And this is a lovely picture of you, my friend.

  15. Sounds like everyone had the perfect Valentine's Day for them- love that!! I was GOING to say that we might not be able to be friends if you don't love bacon, but I hate coffee and you're still friends with ME, so I guess I"ll accept it. :)
