While Thanksgiving is one of our favorite days, the Saturday after Thanksgiving is perhaps our favorite day of the Thanksgiving season. That is the day I make turkey soup. My kids actually look forward to that more than the turkey dinner itself! It is sooooo good, and soooo easy, and makes a perfect, simple meal for a cold November evening. So when you are shopping for Thanksgiving, pick up a few extras and give this one a try. Your family will thank you. I promise. : )

Turkey Soup
Ingredients:
- Turkey bones and carcass
- One stick celery, chopped
- One onion, chopped
- One large can and two small(15oz.) cans chicken broth
- One teaspoon salt
- One teaspoon poultry seasoning
- One eighth teaspoon pepper
- One large can water
- One large bag Kluski noodles
Directions:
- On Thanksgiving, wrap turkey bones and any fat in foil and place in refrigerator.
- When ready to make soup, put bones and any fat in large pot.
- Add celery, onion, chicken broth, salt, poultry seasoning, pepper, and water.
- Cook at boiling, covered, for one hour. Remove any foam.
- Meanwhile, in separate pot, boil noodles. Then drain and set aside.
- Drain bones, fat, and veggies until only broth remains.
- Add cooked noodles, heat, stir, and enjoy!!!!

ReplyDeleteWhy is it that those leftovers are the best part!?! Lol The meal is amazing, but the leftovers win every time. We make big double decker sandwiches filled with stuffy and gravy and cranberry in the sandwich - some melted cheese over it all and it's all toasted. Yum!! I have plans for soup too and yours sounds so good! I've never heard of kluski noodles. Good to know. :) xoxo

ReplyDeleteThank you for posting this! I've been looking for a good Turkey Soup recipe to make this weekend! And those noodles look perfect - I hope my store carries them because I'm not sure if I've seen them before but they really do look "the way I remember them!"
